Whenever I try to make it night time in my map, it looks fine in Sapien but in-game everything is red and yellow and checkered for some reason :?

those red and white checkers are the debug lightmaps. Try running radiosity again, and make sure you hit radiosity_save.

I did, i've tried it about 3 times already but nothing changed
