TOTAL n00b hex question

Sorry for adding on to the already massive stockpile of n00b posts, but i'm to stupid to sucesfully find an answer to my question.
Ok, my question is how come i can't find the offsetts in any lvl, i mean i type in search, and put the offset in and its not there. I also try to manually look for it, and its still not there.
Tell me what im doing wrong, so i can get onto doing actual things with a hex editor.

Okeedoke. Each byte(2 digits) has its own offset. The reason why you can't find it manually (I think) is that the offsets on the left only point towards the first byte in that row. If you right click in the offset panel, and choose goto, you can type the offset in there and it will bring you down to the exact byte that the offset points to. Offsets are like page numbers.

Umm... You are probably doing it all right but here you go anyway. Open a map in a decent Hex Editor. Press Ctrl+G to open the offset finder. Click Hex and click which ever suits you. ( Not current position ) I usually click beginning of file and when it asks me if I'd like to start at the end of the document I click yes. But you also need offsets. Make sure u are using the right offset list. If u are using the demo PC offsets for Retail PC then it wont work. Good luck and have fun modding

Ok, i got that part down now i guess...
But here's another noobish question.
How do u change the bytes into the offsets that you want, and how do u find value, meta, ect from the bytes.
Do you jus copy another thing's bytes and paste it over the existing ones or what do you do?
